Instructions

  1. Remove membrane from the back of Baby back pork ribs. Combine Brown sugar, Smoked paprika, Garlic powder, Onion powder, Cayenne pepper, Salt, and Black pepper to make a dry rub. Coat ribs thoroughly on both sides.
  2. Set up grill or smoker for indirect heat at 110°C (225°F). Add soaked wood chips (hickory or applewood). Place ribs bone-side down on the cool side and close lid.
  3. Smoke for 3 hours, spritzing with Apple cider vinegar every 45 minutes to keep the surface moist and help build bark.
  4. Wrap ribs tightly in foil with a splash of Apple cider vinegar. Return to grill and cook for another 1.5 hours until meat pulls back from the bones.
  5. Unwrap ribs, brush generously with BBQ sauce, and place back on the grill over direct heat for 10 minutes to caramelize the sauce.
  6. Rest for 10 minutes, then slice between the bones and serve with extra BBQ sauce on the side.
