Ingredients
For 4 servings
- 800 gground beef
- 4burger buns
- 8 slicesAmerican cheese
- 1white onion
- 8 slicesdill pickles
- 1 tspsalt
- 1 tspblack pepper
- 30 gbutter
Instructions
- Preheat grill to high heat. Divide Ground beef into 8 equal balls, about 100g each. Season generously with Salt and Black pepper.
- Slice White onion into thin rings. Toast Burger buns on the grill, cut side down, with a thin layer of Butter until golden brown.
- Place beef balls on the hottest part of the grill and smash flat with a heavy spatula. Cook for 2 minutes until edges are deeply charred and crispy.
- Flip patties, immediately top each with an American cheese slices, and cook for another 1-2 minutes until cheese is melted and bubbly.
- Stack two patties on each toasted bun. Top with White onion rings and Dill pickles. Serve immediately.
Cook’s notes
Use ground beef with about 20 percent fat; leaner meat does not get the same crispy edges. Smash the balls once, firmly, in the first few seconds, and do not press again. A cast-iron skillet or griddle works if you do not have a grill.
