Ingredients
For 4 servings
- 600 gground lamb
- 4flatbread
- 1red onion
- 1cucumber
- 200 gGreek yogurt
- 2 tspcumin
- 1 tspcoriander
- 2 clovesgarlic
- 1 tspsalt
- 1 tbspolive oil
Instructions
- In a bowl, combine ground lamb with cumin, coriander, minced garlic, and salt. Mix well and form into small oval patties.
- Heat olive oil in a grill pan or skillet over medium-high heat. Cook the kofta patties for 3-4 minutes per side until cooked through.
- Dice the cucumber and thinly slice the red onion. Mix the cucumber into the Greek yogurt with a pinch of salt for a quick raita.
- Warm the flatbreads in a dry pan for 30 seconds per side.
- Assemble by placing kofta on the flatbreads with sliced red onion and cucumber yogurt sauce.
Cook’s notes
Wet your hands before shaping the kofta so the mixture does not stick, and keep the patties the same size so they cook evenly. Ground beef or a beef and lamb mix works in place of all lamb. The patties can be shaped a day ahead and kept covered in the fridge.
