Ingredients

For 4 servings

Instructions

  1. Slice the chicken breast into thin strips and season with salt and black pepper.
  2. Heat olive oil in a large skillet over high heat and sear the chicken strips until golden, about 4 minutes. Remove and set aside.
  3. Dice the bell pepper and zucchini. In the same skillet, melt butter and saute the minced garlic for 30 seconds.
  4. Add the diced vegetables and cook for 3-4 minutes until tender-crisp.
  5. Return the chicken to the skillet, add soy sauce, and toss everything together for 2 minutes until heated through. Serve immediately.

Cook’s notes

Slice the chicken thinly and keep the pan very hot, cooking in two batches if the strips crowd, or they steam instead of browning. Any quick-cooking vegetable works in place of the zucchini, such as snap peas or broccoli florets cut small. Serve it over steamed rice or noodles to soak up the garlic butter.
