Ingredients
For 4 servings
- 600 gchicken thighs
- 2 handfulsfresh basil
- 3Thai chilies
- 5 clovesgarlic
- 2 tbspsoy sauce
- 1 tbspfish sauce
- 1 tbspbrown sugar
- 2 tbspvegetable oil
- 300 gjasmine rice
Instructions
- Cook jasmine rice according to package directions.
- Mince the chicken thighs finely with a knife. Slice the Thai chili and mince the garlic.
- Heat vegetable oil in a wok over high heat. Stir-fry the garlic and Thai chili for 30 seconds. Add the minced chicken and cook for 5-6 minutes until browned.
- Add soy sauce, fish sauce, and brown sugar. Stir well to coat the chicken. Cook for 1 minute.
- Remove from heat and toss in the fresh basil until just wilted. Serve immediately over jasmine rice.
Cook’s notes
Thai holy basil is traditional, but regular or Thai sweet basil both work; add it off the heat so it wilts without turning black. Mincing the thighs by hand gives a better texture than ground chicken, though ground chicken is a fine shortcut. A crispy fried egg on top of each plate is the classic way to serve it.
