Ingredients

For 4 servings

Instructions

  1. Cut the tops off the bell peppers and remove seeds and membranes. Blanch in boiling water for 3 minutes, then drain upside down.
  2. Brown the ground beef in a skillet with diced yellow onion and minced garlic cloves. Drain excess fat.
  3. Stir the cooked white rice, half of the canned diced tomatoes, Worcestershire sauce, salt, and black pepper into the beef mixture. Cook for 2 minutes to combine.
  4. Stand the bell peppers in a baking dish. Fill each with the beef and rice mixture, pressing down gently. Spoon the remaining diced tomatoes around the peppers. Top each pepper with shredded cheddar cheese.
  5. Cover with foil and bake at 190C for 25 minutes. Remove foil and bake another 5 minutes until cheese is bubbly. Serve hot.

Cook’s notes

Blanching the peppers first means they are tender by the time the filling is hot, so do not skip it. Cooked brown rice, quinoa or cauliflower rice can replace the white rice. Stuffed peppers freeze well individually before the cheese goes on; bake from frozen covered for about 45 minutes.
