Ingredients
For 4 servings
- 600 gbeef sirloin
- 350 gegg noodles
- 250 gcremini mushrooms
- 1yellow onion
- 2 clovesgarlic
- 200 mlsour cream
- 250 mlbeef broth
- 30 gbutter
- 1 tbspDijon mustard
- 1 tspsalt
- 1 pinchblack pepper
Instructions
- Cook the egg noodles in salted boiling water until al dente. Drain and toss with a small pat of butter to prevent sticking.
- Slice the beef sirloin into thin strips. Season with salt and black pepper. Sear in a hot skillet with butter for 2 minutes per side until browned. Remove and set aside.
- In the same skillet, sauté sliced cremini mushrooms, diced yellow onion, and minced garlic cloves until golden, about 5 minutes.
- Pour in the beef broth and Dijon mustard. Simmer for 5 minutes until slightly reduced. Remove from heat and stir in the sour cream until smooth. Return the beef strips to the sauce and warm gently.
- Serve the stroganoff over the buttered egg noodles.
Cook’s notes
Sear the beef in batches and only for a couple of minutes per side; it finishes warming in the sauce and turns tough if overcooked. Stir in the sour cream off the heat so it does not split. Mashed potatoes or rice are good alternatives to egg noodles.
