Ingredients
For 6 servings
- 700 gground beef
- 400 gkidney beans
- 400 gcanned diced tomatoes
- 1yellow onion
- 1green bell pepper
- 3 clovesgarlic
- 3 tbspchili powder
- 1 tbspcumin
- 2 tbsptomato paste
- 250 mlbeef broth
- 1 tspsalt
- 1 pinchblack pepper
Instructions
- Brown the ground beef in a large pot over medium-high heat, breaking it into crumbles, about 6 minutes. Drain excess fat.
- Add the diced yellow onion, diced green bell pepper, and minced garlic cloves. Cook for 5 minutes until softened. Stir in the chili powder, cumin, and tomato paste. Cook for 1 minute.
- Add the canned diced tomatoes, drained kidney beans, and beef broth. Bring to a boil, then reduce heat to low. Season with salt and black pepper.
- Simmer uncovered for 40 minutes, stirring occasionally, until the chili is thick and flavors have melded. Adjust seasoning to taste.
- Serve in bowls topped with your choice of sour cream, shredded cheese, and sliced green onions.
Cook’s notes
The chili tastes even better the next day, so it is a good make-ahead dish; it keeps 4 days in the fridge and freezes for 3 months. Black or pinto beans can replace the kidney beans. For more depth, add a square of dark chocolate or a splash of coffee in the last 10 minutes of simmering.
