Ingredients

For 4 servings

Instructions

  1. Cut the chicken breast into bite-sized pieces and marinate in buttermilk for 10 minutes.
  2. Crush the cornflakes and mix with garlic powder, smoked paprika, cayenne pepper, salt and black pepper. Coat the marinated chicken in the crumb mixture.
  3. Heat olive oil in a skillet over medium-high heat and pan-fry the chicken for 3-4 minutes per side until crispy and cooked through.
  4. Meanwhile, cook the cavatappi pasta in salted water until al dente. Drain.
  5. Melt the butter in a saucepan, whisk in the milk and cream cheese, then add the cheddar cheese and stir until smooth.
  6. Toss the pasta with the cheese sauce, top with crispy chicken, drizzle generously with hot honey, and sprinkle with sliced scallions.

Cook’s notes

If you do not have hot honey, warm regular honey with a pinch of chili flakes or a little hot sauce. Pan-fry the chicken in batches so the cornflake crust stays crisp. Make the cheese sauce last and serve straight away, as it thickens quickly.
