Ingredients

For 4 servings

Instructions

  1. Score the skin of Duck breasts in a crosshatch pattern, cutting through the fat but not into the meat. Season generously with Salt and Black pepper.
  2. Pit and halve Fresh cherries. Combine with BBQ sauce, Red wine, and Brown sugar in a small saucepan. Simmer for 15 minutes until cherries are soft and sauce is thickened.
  3. Start Duck breasts skin-side down on the cooler side of the grill. Cook for 8-10 minutes to render the fat slowly. The skin should be deeply golden and crisp.
  4. Flip and move to direct heat. Grill flesh side for 3-4 minutes for medium-rare (57°C internal). Baste with cherry BBQ sauce in the final minute.
  5. Rest for 8 minutes, then slice on the bias. Spoon remaining cherry BBQ sauce over sliced duck and garnish with Fresh thyme leaves.
