Ingredients

For 4 servings

Instructions

  1. Thinly slice the yellow onions. Melt the butter with olive oil in a large skillet over medium-low heat. Add the onions, sugar and salt.
  2. Cook the onions, stirring every 5 minutes, for 35-40 minutes until deeply caramelized and jammy.
  3. Mince the garlic and add to the onions with fresh thyme leaves stripped from sprigs. Cook 1 minute, then sprinkle flour over and stir for 1 minute.
  4. Deglaze with dry white wine, scraping up any browned bits, then pour in beef broth. Bring to a simmer and add the cavatappi pasta. Cook 10-12 minutes, stirring often, until pasta is tender and sauce is creamy.
  5. Off heat, grate in the Gruyere cheese and stir until melted. Season with black pepper.

Cook’s notes

Do not rush the onions: the 35 to 40 minutes over medium-low heat is what gives the dish its sweet, deep flavour. If they start to catch, add a splash of water. Swiss cheese or Comté work if you cannot find Gruyere.
