Ingredients
For 4 servings
- 400 gtagliatelle
- 300 gground beef
- 200 gground pork
- 1onion
- 1carrot
- 2 stalkscelery
- 400 gcrushed tomatoes
- 150 mlred wine
- 2 tbspolive oil
- 60 gParmesan
Instructions
- Finely dice the onion, carrot, and celery to create a soffritto. Heat olive oil in a large heavy-bottomed pot over medium heat and cook the vegetables until softened, about 8 minutes.
- Add the ground beef and ground pork to the pot. Break the meat apart with a wooden spoon and cook until browned, about 10 minutes.
- Pour in the red wine and let it simmer until mostly evaporated. Add the crushed tomatoes, stir well, and bring to a gentle simmer.
- Reduce heat to low, partially cover, and let the sauce simmer for at least 60 minutes, stirring occasionally. Season with salt and pepper to taste.
- Cook the tagliatelle in salted boiling water until al dente. Drain and toss with the bolognese sauce. Serve topped with freshly grated Parmesan.
Cook’s notes
The long, slow simmer is what makes the sauce rich, so give it the full hour or longer. A splash of milk added after the wine is a traditional touch that softens the acidity. Bolognese freezes very well, so it is worth doubling the batch.
