Ingredients
For 4 servings
- 400 gspaghetti
- 200 gguanciale
- 6egg yolks
- 100 gPecorino Romano
- 2 tspblack pepper
- 1 tspsalt
Instructions
- Bring a large pot of salted water to a boil. Cook the spaghetti according to package directions until al dente, reserving 1 cup of pasta water before draining.
- While the pasta cooks, cut the guanciale into small strips and cook in a large skillet over medium heat until crispy and the fat has rendered, about 8 minutes.
- In a bowl, whisk together the egg yolks, finely grated Pecorino Romano, and a generous amount of freshly ground black pepper until smooth.
- Remove the skillet from heat. Add the drained spaghetti to the guanciale and toss to coat in the rendered fat.
- Pour the egg and cheese mixture over the pasta, tossing vigorously. Add splashes of reserved pasta water as needed to create a silky, creamy sauce that coats each strand. Serve immediately with extra Pecorino and black pepper.
