Ingredients
For 4 servings
- 400 gorecchiette
- 400 gItalian sausage
- 300 gbroccoli rabe
- 4 clovesgarlic
- 1 tspred pepper flakes
- 3 tbspolive oil
- 60 gPecorino Romano
- 1 tspsalt
Instructions
- Trim the broccoli rabe, cutting away the tough stems. Blanch in salted boiling water for 2 minutes, then remove with a slotted spoon. Use the same water to cook the orecchiette until al dente.
- Remove the sausage from its casing and crumble. Heat olive oil in a large skillet over medium-high heat and cook the sausage until browned and crispy, about 8 minutes.
- Add the sliced garlic and red pepper flakes to the skillet, cooking for 1 minute. Add the blanched broccoli rabe and toss for 2 minutes until warmed through.
- Drain the orecchiette, reserving pasta water. Add the pasta to the skillet and toss everything together, adding pasta water as needed.
- Serve with a generous grating of Pecorino Romano.
Cook’s notes
Broccoli rabe is pleasantly bitter; if you prefer it milder, broccolini or regular broccoli florets work and need the same blanching. Cooking the pasta in the blanching water carries the green flavour into it. Parmesan can replace the Pecorino Romano, which is saltier, so taste before adding extra salt.
