Ingredients
For 8 servings
- 500 gmascarpone cheese
- 4eggs
- 100 ggranulated sugar
- 300 mlespresso coffee
- 200 gladyfinger biscuits
- 2 tbspcocoa powder
- 3 tbspMarsala wine
- 1 tspvanilla extract
Instructions
- Brew the espresso coffee and let it cool completely. Stir in the Marsala wine and set aside.
- Separate the eggs. Beat egg yolks with granulated sugar until thick and pale, about 4 minutes. Add mascarpone cheese and vanilla extract, mixing until smooth.
- In a clean bowl, whip the egg whites to stiff peaks. Gently fold the whipped whites into the mascarpone mixture in two additions.
- Quickly dip each ladyfinger biscuit into the coffee mixture—do not soak—and arrange in a single layer in a 9x13 inch dish. Spread half the mascarpone cream over the biscuits. Repeat with a second layer.
- Dust the top generously with cocoa powder. Cover and refrigerate for at least 4 hours, preferably overnight, before serving.
Cook’s notes
The recipe uses raw eggs, so use very fresh, pasteurised eggs if you are serving anyone pregnant, elderly or very young. Dip the ladyfingers quickly, as they soak up coffee fast. For an alcohol-free version, leave out the Marsala and add a little extra vanilla.
