Ingredients

For 12 servings

Instructions

  1. Preheat oven to 160C (325F). Crush graham crackers into fine crumbs and mix with melted butter and a pinch of salt. Press firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes.
  2. Beat cream cheese with granulated sugar until completely smooth and no lumps remain, about 4 minutes on medium speed.
  3. Add sour cream and vanilla extract, mixing until incorporated. Beat in eggs one at a time on low speed, mixing just until each is blended. Sift in all-purpose flour and fold gently.
  4. Pour filling over the crust. Wrap the outside of the pan in foil and place in a roasting pan. Pour hot water into the roasting pan to come halfway up the sides of the springform.
  5. Bake for 60-70 minutes until the edges are set but the center still has a slight wobble. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour. Refrigerate for at least 4 hours before serving.

Cook’s notes

Have the cream cheese and eggs at room temperature, so the batter is smooth without overmixing, which causes cracks. The water bath and slow cooling in the oven are what keep the top from cracking. The cheesecake keeps 5 days in the fridge and freezes well.
