Ingredients

For 6 servings

Instructions

  1. Season the Duck legs with salt and pepper. Sear them skin-side down in a hot skillet (no oil needed as duck renders its own fat) until the skin is golden and crispy, about 5 minutes. Transfer to the slow cooker.
  2. Finely dice the Yellow onion, Carrots, and Celery stalks. Saute in the duck fat until softened, about 4 minutes. Add minced Garlic cloves and cook 1 minute more.
  3. Pour in the Red wine and reduce by half. Add the Canned crushed tomatoes, Fresh rosemary, and Bay leaves. Transfer everything to the slow cooker.
  4. Cover and cook on LOW for 7 hours until the duck meat is falling off the bone.
  5. Remove the duck legs, shred the meat and discard the skin and bones. Return the shredded duck to the sauce and remove the bay leaves and rosemary stems. Serve over pappardelle pasta.

Cook’s notes

Searing the duck legs skin-side down renders the fat you then use for the vegetables, so there is no need for oil. Chicken thighs work if you cannot find duck legs, with about 5 hours on low. The ragu freezes well for up to 3 months; toss it with pappardelle or serve over polenta.
