Ingredients
For 4 servings
- 400 glinguine
- 500 glarge shrimp
- 6 clovesgarlic
- 120 mlwhite wine
- 50 gbutter
- 2 tbspolive oil
- 1lemon
- ½ tspred pepper flakes
- 1 handfulfresh parsley
Instructions
- Cook the linguine in salted boiling water until al dente. Reserve 1 cup of pasta water and drain.
- Heat olive oil and half the butter in a large skillet over medium-high heat. Season the shrimp with salt and sear for 2 minutes per side until pink. Remove and set aside.
- In the same skillet, add minced garlic and red pepper flakes, cooking for 30 seconds. Pour in the white wine and simmer for 2 minutes to reduce slightly.
- Add the remaining butter, the juice of the lemon, and the drained linguine. Toss to combine, adding pasta water as needed for a silky sauce.
- Return the shrimp to the skillet, toss gently, and garnish with chopped fresh parsley. Serve immediately.
Cook’s notes
Take the shrimp out as soon as they turn pink, since they finish cooking when they go back in the pan. If you skip the wine, use chicken broth with an extra squeeze of lemon. Pasta water is what turns the butter and wine into a silky sauce, so reserve it before draining.
