Ingredients
For 2 servings
- 350 gshrimp
- 240 gblack beans
- 150 gbrown rice
- 150 gcorn kernels
- 1avocado
- 1lime
- 1 tspchipotle powder
- ½ tspcumin
- ½ tspgarlic powder
- 1 tbspolive oil
- 3 tbspfresh cilantro
- ½ tspsalt
Instructions
- Cook the brown rice according to package directions. Drain and rinse the black beans.
- Pat the shrimp dry and toss with chipotle powder, cumin, garlic powder and salt.
- Heat olive oil in a skillet over medium-high heat. Sear the shrimp for 2 minutes per side until pink and opaque.
- Slice the avocado and chop the fresh cilantro.
- Divide brown rice between bowls. Top with black beans, corn kernels, shrimp, avocado slices, fresh cilantro, and a generous squeeze of lime.
Cook’s notes
Pat the shrimp very dry so they sear rather than steam. Chicken breast strips, cooked about 4 minutes per side, can replace the shrimp. For meal prep, keep the avocado and lime separate and add them when you eat.
