Ingredients
For 4 servings
- 4duck breasts
- 3 tbsphoney
- 6 sprigsfresh thyme
- 1orange
- 3 clovesgarlic
Instructions
- Score the skin of each duck breast in a crosshatch pattern, being careful not to cut into the meat. Season both sides generously with salt and pepper.
- Place the duck breasts skin-side down in a cold skillet. Turn heat to medium and render the fat for 8-10 minutes until the skin is golden and crispy. Pour off excess fat.
- Flip the breasts. Add the crushed garlic cloves and fresh thyme sprigs to the pan. Cook for 4-5 minutes for medium-rare, basting with the pan juices.
- Remove the duck and let rest for 5 minutes. Add the honey and juice of the orange to the pan, stirring to deglaze and create a glaze. Slice the duck and drizzle with the honey-orange sauce.
