Ingredients
For 12 servings
- 100 gall-purpose flour
- 80 gbutter
- 160 mlwater
- 3eggs
- 300 mlheavy cream
- 150 gdark chocolate
- 40 ggranulated sugar
- 1 tspvanilla extract
- 1 pinchsalt
Instructions
- Preheat oven to 200C (400F). Bring water, butter, granulated sugar, and salt to a boil in a saucepan. Remove from heat and add all-purpose flour all at once, stirring vigorously until a smooth ball of dough forms.
- Let the dough cool for 2 minutes, then beat in the eggs one at a time, mixing thoroughly after each, until the dough is glossy and drops from a spoon in a thick ribbon.
- Pipe or spoon walnut-sized mounds of dough onto parchment-lined baking sheets, spacing them 5cm apart. Bake for 25-28 minutes until golden and puffed. Pierce each puff with a skewer to release steam and let cool.
- Whip heavy cream with vanilla extract and a tablespoon of granulated sugar to stiff peaks. Fill each cooled puff by piping cream through the bottom.
- Melt dark chocolate with 60ml of heavy cream, stirring until smooth. Dip the tops of the filled profiteroles in the chocolate sauce and let set. Serve immediately or chill until ready.
