Ingredients
For 6 servings
- 200 gdark chocolate
- 4eggs
- 240 mlheavy cream
- 50 ggranulated sugar
- 30 gbutter
- 1 tspvanilla extract
- 1 pinchsalt
Instructions
- Chop the dark chocolate and melt it with butter in a bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.
- Separate the eggs. Beat egg yolks with half the granulated sugar and vanilla extract until thick and pale. Stir the melted chocolate into the yolk mixture.
- Whip heavy cream to soft peaks and set aside. In a clean bowl, whip egg whites with salt until foamy, then gradually add remaining granulated sugar and beat to stiff peaks.
- Fold one-third of the whipped egg whites into the chocolate mixture to lighten it. Then gently fold in the remaining whites, followed by the whipped cream, until no streaks remain.
