Ingredients
For 20 servings
- 150 galmond flour
- 150 gpowdered sugar
- 4egg whites
- 100 ggranulated sugar
- 1 pinchcream of tartar
- 115 gbutter
- 1 tspvanilla extract
Instructions
- Sift almond flour and powdered sugar together twice into a large bowl, discarding any large pieces.
- Whip egg whites with cream of tartar until foamy, then gradually add granulated sugar. Continue whipping to stiff, glossy peaks.
- Fold the dry ingredients into the meringue using a spatula, using about 40-50 strokes until the batter flows like lava and a figure-eight can be drawn without breaking. Transfer to a piping bag with a round tip.
- Pipe small rounds (about 3cm) onto parchment-lined baking sheets. Tap sheets firmly on the counter to release air bubbles. Let rest for 30-60 minutes until a dry skin forms. Preheat oven to 150C (300F) and bake for 14-16 minutes.
- For the filling, beat softened butter with powdered sugar and vanilla extract until fluffy. Pipe filling onto the flat side of one shell and sandwich with another. Refrigerate for 24 hours before serving for best texture.
