Ingredients
For 12 servings
- 500 gall-purpose flour
- 240 mlwhole milk
- 115 gbutter
- 60 ggranulated sugar
- 1egg
- 7 ginstant yeast
- 200 gbrown sugar
- 2 tbspcinnamon
- 115 gcream cheese
- 120 gpowdered sugar
Instructions
- Warm the whole milk until lukewarm. Stir in instant yeast and let bloom for 5 minutes. Add granulated sugar, melted 55g of butter, egg, and half the all-purpose flour. Mix well, then add remaining flour and knead for 8 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour until doubled in size.
- Roll dough into a large rectangle about 40x30cm. Spread 30g of softened butter over the surface. Mix brown sugar and cinnamon together and sprinkle evenly over the buttered dough.
- Starting from the long side, roll the dough tightly into a log. Cut into 12 equal pieces and place in a greased 9x13 inch baking pan. Cover and let rise for 30 minutes. Preheat oven to 180C (350F).
- Bake for 22-25 minutes until golden brown. While baking, beat cream cheese with remaining softened butter and powdered sugar until smooth. Spread the glaze generously over the warm rolls.
Cook’s notes
The milk should feel just warm to the touch; if it is too hot, it kills the yeast. You can shape the rolls the night before, cover and refrigerate them, then let them come to room temperature for about an hour before baking. Baked rolls freeze well without the frosting.
