Ingredients
For 4 servings
- 600 gsalmon fillets
- 300 gsoba noodles
- 4 tbspsoy sauce
- 2 tbspmirin
- 1 tbsphoney
- 1 tbspginger
- 200 gedamame
- 1 tbspsesame oil
- 3 stalksgreen onions
Instructions
- Mix soy sauce, mirin, honey, and freshly grated ginger to create the teriyaki sauce. Reserve half for drizzling later.
- Brush salmon fillets with half the teriyaki sauce. Bake at 200C (400F) for 12-15 minutes until the salmon flakes easily with a fork.
- Cook soba noodles according to package directions. Drain, rinse under cold water, and toss with sesame oil to prevent sticking.
- Cook edamame in boiling water for 3 minutes, then drain.
- Divide noodles among containers. Top with salmon and edamame. Drizzle with reserved teriyaki sauce and garnish with sliced green onions. Refrigerate for up to 3 days.
Cook’s notes
Brush the salmon only with the sauce reserved for basting, never with the half you plan to drizzle at the end. Rinsing the soba under cold water removes surface starch so the noodles do not clump in the fridge. Eat the bowls cold or warm the salmon briefly; they keep for 3 days.
