Ingredients
For 4 servings
- 700 gchicken thighs
- 200 gGreek yogurt
- 1cucumber
- 4pita bread
- 1red onion
- 2tomatoes
- 1 tbspdried oregano
- 1lemon
- 3 clovesgarlic
- 3 tbspolive oil
Instructions
- Marinate the chicken thighs with olive oil, dried oregano, lemon juice, and minced garlic for at least 20 minutes.
- Make tzatziki by grating the cucumber, squeezing out excess water, and mixing with Greek yogurt and one minced garlic clove. Season with salt.
- Grill or pan-fry the chicken thighs over medium-high heat for 6-7 minutes per side until cooked through. Let rest briefly, then slice into strips.
- Slice the tomato and red onion into thin rings. Warm the pita bread on the grill or in a dry pan.
- Spread tzatziki on each warm pita, layer sliced chicken, tomato, and red onion. Fold and serve immediately.
Cook’s notes
Squeeze the grated cucumber well, or the tzatziki turns watery. The chicken can marinate overnight for more flavour, and the tzatziki can be made a day ahead. Add a few fries inside the pita for the street-food version.
