Instructions

  1. Melt half the butter in a large pot over medium heat. Add the diced yellow onion and cook for 5 minutes until soft. Add minced garlic cloves and cook for 1 minute.
  2. Add the canned crushed tomatoes and vegetable broth. Bring to a simmer and cook for 15 minutes. Add fresh basil leaves and blend with an immersion blender until smooth.
  3. Stir in the heavy cream and season with salt and black pepper. Keep warm over low heat.
  4. Make grilled cheese croutons: butter the sourdough bread slices, sandwich them with cheddar cheese, and grill in a skillet over medium heat until golden on both sides and cheese is melted. Cut into bite-sized cubes.
  5. Ladle the soup into bowls and top with the grilled cheese croutons. Serve immediately.

Cook’s notes

An immersion blender is easiest, but if you use a countertop blender, fill it only halfway and vent the lid, because hot soup expands. The soup keeps for 4 days and freezes well without the cream, which you can stir in when reheating. Make the croutons just before serving so they stay crisp.
