Instructions

  1. Cook the elbow macaroni in a large pot of salted boiling water until al dente, about 7 minutes. Drain and set aside.
  2. In the same pot, melt the butter over medium heat. Whisk in the all-purpose flour and dry mustard and cook for 1 minute to form a roux.
  3. Gradually pour in the whole milk while whisking constantly. Cook until the sauce thickens, about 4 minutes. Remove from heat and stir in the egg yolks and two-thirds of the sharp cheddar cheese until melted and smooth. Season with salt and black pepper.
  4. Fold the cooked macaroni into the cheese sauce. Transfer to a greased 9x13 baking dish. Top with the remaining cheddar cheese and panko breadcrumbs.
  5. Bake at 190C for 20 minutes until the top is golden brown and bubbling. Let rest for 5 minutes before serving.

Cook’s notes

Take the pan off the heat before adding the egg yolks and cheese so the yolks do not scramble and the sauce stays smooth. Grate your own cheddar: pre-shredded cheese is coated in starch and melts grainier. You can assemble the dish up to a day ahead, refrigerate it, and add 10 minutes to the baking time.
