Ingredients

For 6 servings

Instructions

  1. Poach the chicken breast in simmering salted water for 15 minutes until cooked through. Remove, let cool slightly, then shred into bite-sized pieces.
  2. Melt butter in a large skillet over medium heat. Add diced yellow onion, diced carrots, and sliced celery stalks. Cook for 5 minutes until softened.
  3. Sprinkle in the all-purpose flour and stir for 1 minute. Gradually whisk in the chicken broth and heavy cream. Simmer until thickened, about 4 minutes. Add the shredded chicken and frozen peas. Season with salt and black pepper.
  4. Pour the filling into a deep pie dish. Top with the puff pastry sheet, trimming edges and crimping to seal. Cut a few small vents in the top.
  5. Bake at 200C for 25 minutes until the pastry is puffed and golden brown. Let cool for 5 minutes before serving.

Cook’s notes

A rotisserie chicken shortcut saves the poaching step: use about 450 g of shredded meat. Let the filling cool for a few minutes before adding the pastry so the butter in the puff pastry does not melt before it hits the oven. The filling can be made a day ahead and kept in the fridge.
