Ingredients

For 6 servings

Instructions

  1. Bring water, butter, 1 tablespoon of granulated sugar, and a pinch of salt to a boil in a saucepan. Remove from heat and add all-purpose flour all at once, stirring vigorously until a smooth dough forms.
  2. Let the dough cool slightly, then beat in the eggs one at a time until the dough is smooth and pipeable. Transfer to a piping bag fitted with a large star tip.
  3. Heat vegetable oil to 190C (375F) in a deep saucepan. Pipe 10cm lengths of dough directly into the oil, cutting with scissors. Fry in batches for 3-4 minutes, turning once, until golden and crispy.
  4. Mix remaining granulated sugar with cinnamon on a plate. Roll the hot churros in the cinnamon sugar mixture.
  5. Make the chocolate sauce: heat heavy cream until simmering, pour over chopped dark chocolate, and stir until smooth. Serve churros warm with the chocolate dipping sauce.

Cook’s notes

Keep the oil at 190C (375F); at a lower temperature the churros absorb oil and turn greasy. Make sure the dough is not too hot when you add the eggs, or they start to cook. The chocolate sauce can be made ahead and gently rewarmed.
