Ingredients

For 4 servings

Instructions

  1. Cook short grain rice according to package instructions. Julienne carrots and zucchini into thin matchsticks.
  2. Season beef mince with soy sauce, half the sesame oil, and minced garlic. Cook in a hot skillet over high heat until browned and caramelized, about 6 minutes.
  3. Sauté each vegetable separately: blanch spinach for 1 minute and squeeze dry; stir-fry carrots for 2 minutes; stir-fry zucchini for 2 minutes; quickly blanch bean sprouts. Season each lightly with salt and a drizzle of sesame oil.
  4. Mix gochujang with a tablespoon of water and a splash of sesame oil to make a sauce.
  5. Assemble bowls: place rice in the center of each container. Arrange beef and each vegetable in separate sections around the rice. Pack gochujang sauce on the side. Refrigerate for up to 4 days.

Cook’s notes

Cooking each vegetable separately looks fussy but keeps the colours and textures distinct, which is the point of bibimbap. A fried egg with a runny yolk on top of each bowl is the classic finish. Adjust the gochujang sauce to taste, since brands vary in heat and saltiness.
