Instructions

  1. Preheat oven to 175C (350F). Finely chop the walnuts and pistachios and toss them together with cinnamon.
  2. Melt the butter. Brush a 9x13 inch baking dish with butter. Layer 8 sheets of phyllo dough in the dish, brushing each sheet generously with melted butter.
  3. Spread one-third of the nut mixture over the phyllo. Layer 4 more sheets of phyllo, buttering each. Repeat nut and phyllo layers two more times, ending with 8 buttered phyllo sheets on top.
  4. Using a sharp knife, cut the baklava into diamond or square shapes all the way through to the bottom. Bake for 40-45 minutes until golden and crispy.
  5. While baking, make the syrup: simmer granulated sugar, honey, water, and lemon juice for 10 minutes until slightly thickened. Pour the hot syrup evenly over the baklava as soon as it comes out of the oven. Let cool completely before serving.

Cook’s notes

Pour hot syrup over the baklava straight from the oven so it soaks in without making the pastry soggy. Keep the phyllo covered with a damp towel while layering. Baklava keeps for up to a week at room temperature, covered; do not refrigerate it, which hardens the honey.
