Ingredients
For 4 servings
- 400 gpork belly
- 400 gramen noodles
- 1½ lpork broth
- 4 tbspsoy sauce
- 2 tbspmirin
- 4 clovesgarlic
- 30 gfresh ginger
- 4eggs
- 4 stalksgreen onions
- 1 tbspsesame oil
- 4 sheetsnori
Instructions
- Combine soy sauce, mirin, minced garlic, and grated fresh ginger in a bowl. Place the pork belly in a baking dish, pour the marinade over it, and roast at 180°C for 50 minutes until caramelized and tender.
- While the pork roasts, bring a small pot of water to a boil. Carefully lower in the eggs and cook for exactly 7 minutes for a jammy yolk. Transfer to ice water, then peel and halve.
- Heat the pork broth in a large pot over medium heat. Add the sesame oil and bring to a gentle simmer. Keep warm while you prepare the noodles.
- Cook the ramen noodles according to package directions, typically 2-3 minutes in boiling water. Drain well.
- Slice the roasted pork belly into thin pieces. Divide the noodles among bowls, ladle the hot broth over them, and top with sliced pork, halved eggs, sliced green onions, and nori sheets.
Cook’s notes
Store-bought pork broth makes this a weeknight ramen; for a richer bowl, simmer it with a little extra garlic and ginger. The 7-minute eggs can be made a day ahead and marinated overnight in a little soy sauce and mirin. Chashu-style pork belly also slices more neatly once chilled.
