Ingredients
For 4 servings
- 400 gfirm tofu
- 200 gbrown rice
- 150 gedamame
- 3 tbspsesame seeds
- 3 tbspsoy sauce
- 1 tbsprice vinegar
- 1 tbspsesame oil
- 1avocado
- 3 stalksgreen onion
Instructions
- Press the firm tofu for 15 minutes between paper towels with a heavy object on top to remove excess moisture. Cut into 1-inch cubes. Cook the brown rice according to package directions.
- Toss the tofu cubes in 1 tablespoon of soy sauce, then coat with sesame seeds, pressing gently to adhere.
- Heat sesame oil in a non-stick pan over medium-high heat. Pan-fry the sesame-crusted tofu for 2-3 minutes per side until golden and crispy on all sides.
- Cook the edamame in boiling water for 3 minutes, then drain. Mix remaining soy sauce with rice vinegar to make a dressing.
- Assemble bowls with brown rice, crispy tofu, edamame, and sliced avocado. Drizzle with the soy-vinegar dressing and garnish with sliced green onions.
Cook’s notes
Pressing the tofu is what makes it crisp, so give it the full 15 minutes. White sesame seeds alone work, but a mix of white and black looks good and tastes the same. Quinoa or white rice can replace the brown rice if you want it faster.
