Ingredients

For 4 servings

Instructions

  1. Marinate the chicken thighs in plain yogurt, cumin, paprika, turmeric, cinnamon, olive oil, and the juice of half a lemon for at least 30 minutes.
  2. Preheat a grill or large skillet over medium-high heat. Cook the marinated chicken thighs for 6-7 minutes per side until well charred and the internal temperature reaches 74°C (165°F).
  3. Let the chicken rest for 5 minutes, then slice into thin strips.
  4. Make the tahini sauce by mixing tahini with the juice of the remaining half lemon and a splash of water until smooth and drizzleable.
  5. Warm the pita bread and fill with sliced chicken. Drizzle generously with the tahini sauce. Serve immediately.

Cook’s notes

The yogurt marinade tenderises the chicken; give it at least 30 minutes, or marinate overnight. Thighs stay juicier than breast on the high heat. Pickled red onion, sliced tomato and cucumber are good additions in the pita.
