Ingredients
For 4 servings
- 700 gchicken breasts
- 150 gpanko breadcrumbs
- 2eggs
- 60 gflour
- 100 gJapanese curry roux
- 1onion
- 2carrots
- 2potatoes
- 300 mlvegetable oil
- 400 gsteamed rice
Instructions
- Dice onion, carrots, and potatoes into bite-sized pieces. Simmer in 600ml of water for 15 minutes until tender. Add the Japanese curry roux and stir until dissolved and thickened.
- Butterfly or pound chicken breasts to an even 1.5 cm thickness. Set up a breading station: flour, beaten eggs, and panko breadcrumbs.
- Coat each chicken breast in flour, then egg, then press firmly into panko breadcrumbs to create an even coating.
- Heat vegetable oil to 180°C (350°F) in a deep pan. Fry the breaded chicken for 4-5 minutes per side until golden and crispy. Drain on paper towels and let rest for 2 minutes before slicing into strips.
- Serve steamed rice on one side of a plate, ladle curry sauce alongside, and arrange the sliced chicken katsu on top.
Cook’s notes
Pound the chicken to an even thickness so it cooks through before the panko burns. Pork loin cutlets work in place of chicken for tonkatsu curry. The curry sauce keeps for 4 days and freezes well, but fry the katsu fresh, as it loses its crunch when reheated.
