Ingredients
For 4 servings
- 500 gchicken thighs
- 200 gjasmine rice
- 1½ lchicken broth
- 3 slicesfresh ginger
- 2 tbspsoy sauce
- 1 tspsesame oil
- 3 stalksgreen onions
- ½ tspwhite pepper
Instructions
- Rinse jasmine rice thoroughly under cold water until the water runs clear. This helps create a smoother porridge.
- In a large pot, combine the rinsed rice, chicken broth, chicken thighs, and sliced fresh ginger. Bring to a boil over high heat.
- Reduce heat to low, cover, and simmer for 50-60 minutes, stirring occasionally to prevent sticking. The rice should break down into a thick, creamy porridge.
- Remove the chicken thighs, shred the meat with two forks, and return it to the pot. Discard the ginger slices. Season with soy sauce and white pepper.
- Ladle into bowls and drizzle with sesame oil. Top with thinly sliced green onions.
