Ingredients
For 4 servings
- 400 gsweet potatoes
- 400 gblack beans
- 80 goats
- 1 tspsmoked paprika
- 1 tspcumin
- 1 tspgarlic powder
- 4burger buns
- 1avocado
- 2 tbspvegetable oil
Instructions
- Peel and dice sweet potatoes. Boil in salted water for 15 minutes until fork-tender. Drain and mash until smooth.
- Drain and rinse black beans. Add to the mashed sweet potato and mash roughly, leaving some beans whole for texture.
- Mix in oats, smoked paprika, cumin, and garlic powder. Stir until combined. Refrigerate for 15 minutes, then shape into 4 patties.
- Heat vegetable oil in a skillet over medium heat. Cook patties for 5 minutes per side until a crispy crust forms.
- Toast the burger buns lightly. Place patties on buns and top with sliced avocado. Serve immediately.
Cook’s notes
Chilling the mixture for 15 minutes before shaping firms it up so the patties hold together in the pan. Use rolled oats or quick oats, and certified gluten-free oats and buns if you need it gluten-free. The patties freeze well uncooked, separated by baking paper.
