Ingredients
For 6 servings
- 800 gchicken breast
- 400 gwhite beans
- 500 mlchicken broth
- 1yellow onion
- 3 clovesgarlic
- 120 ggreen chiles
- 2 tspcumin
- 120 gcream cheese
- 1lime
Instructions
- Dice the Yellow onion and mince the Garlic cloves. Place them in the slow cooker along with the whole Chicken breast pieces.
- Add the drained White beans, Chicken broth, Green chiles, and Cumin to the slow cooker. Stir to combine.
- Cover and cook on LOW for 6 hours until the chicken is cooked through and tender.
- Remove the chicken and shred it with two forks. Return the shredded chicken to the pot.
- Stir in the Cream cheese until melted and smooth. Squeeze the Lime juice over the chili and stir. Serve with tortilla chips and sour cream.
Cook’s notes
Stir in the cream cheese at the end only, after shredding the chicken, so it melts smoothly. Chicken thighs can replace breasts and stay more tender over the long cook. The chili freezes well before the lime and cream cheese go in; add both after reheating.
