Ingredients

For 4 servings

Instructions

  1. Cut chicken breast into 1-inch cubes. Toss with olive oil, dried oregano, juice of half the lemon, salt, and pepper. Thread onto skewers if desired.
  2. Grill or pan-sear the chicken over medium-high heat for 10-12 minutes, turning occasionally, until golden and cooked through.
  3. Chop the romaine lettuce, dice the cucumber, halve the cherry tomatoes, and thinly slice the red onion. Combine in a large bowl.
  4. Make the dressing by whisking together Greek yogurt, remaining lemon juice, and a drizzle of olive oil.
  5. Top the salad with grilled chicken, crumbled feta cheese, and drizzle with the yogurt dressing.

Cook’s notes

The chicken can marinate in the oregano and lemon mixture for a few hours or overnight for more flavour. If you use wooden skewers, soak them in water for 20 minutes so they do not burn. Store the dressing separately and dress the salad just before eating so the romaine stays crisp.
