Ingredients
For 4 servings
- 250 gpre-cooked cornmeal
- 200 gmozzarella cheese
- 2 tbspbutter
- 1 tspsalt
- 300 mlwarm water
- 2 tbspvegetable oil
Instructions
- Mix the pre-cooked cornmeal with warm water, butter, and salt. Knead for 3 minutes until a smooth, pliable dough forms. Let rest for 5 minutes.
- Shred the mozzarella cheese. Divide the dough into 8 equal balls, flatten each, place cheese in the center, seal, and flatten into thick discs about 8cm wide.
- Heat vegetable oil on a griddle or skillet over medium heat. Cook the arepas for 5-6 minutes per side until a golden crust forms and the cheese inside melts.
- Serve the arepas hot, splitting them open slightly if desired, so the melted cheese stretches.
