Ingredients

For 4 servings

Instructions

  1. Make the dough by mixing all-purpose flour, a pinch of salt, and 2 tablespoons of oil. Gradually add water until a firm dough forms. Cover and rest for 30 minutes.
  2. Boil the potatoes until tender, then peel and roughly mash. Finely chop the green chili and grate the ginger.
  3. Heat a tablespoon of oil in a pan, add cumin seeds until they splutter, then add ginger, chili, green peas, garam masala, and mashed potatoes. Mix well and let the filling cool.
  4. Divide the dough into 8 balls, roll each into an oval, and cut in half. Form each half into a cone, fill with the potato mixture, and seal edges with water.
  5. Heat remaining vegetable oil to 170°C and deep-fry the samosas in batches for 5-6 minutes, turning occasionally, until golden and crispy. Drain on paper towels.

Cook’s notes

Let the filling cool completely before shaping, so it does not soften the dough. Keep the oil at a moderate heat; if it is too hot, the pastry browns before it crisps through. Uncooked samosas freeze well on a tray and can be fried from frozen with a minute or two extra.
