Instructions

  1. Cook the lasagna noodles according to package directions until just al dente. Drain, toss with a drizzle of olive oil to prevent sticking, and lay flat.
  2. Brown the ground beef in a large skillet over medium-high heat with minced garlic cloves, salt, and black pepper, breaking it up as it cooks. Drain excess fat and stir in the marinara sauce. Simmer for 10 minutes.
  3. In a bowl, mix the ricotta cheese with eggs, half the Parmesan cheese, and torn fresh basil leaves until smooth.
  4. In a greased 9x13 baking dish, layer: meat sauce, noodles, ricotta mixture, shredded mozzarella cheese. Repeat layers three times, ending with sauce and mozzarella on top. Sprinkle with remaining Parmesan cheese.
  5. Cover with foil and bake at 190C for 30 minutes. Remove foil and bake another 15 minutes until bubbly and golden. Rest for 15 minutes before slicing.

Cook’s notes

The 15-minute rest before slicing matters: it lets the layers set so the slices hold their shape. Half ground beef and half Italian sausage gives a richer sauce. The whole lasagna can be assembled a day ahead, or frozen unbaked for up to 3 months; bake from chilled with the foil on for an extra 15 minutes.
