Ingredients

For 4 servings

Instructions

  1. Slice chicken breasts into thin strips. Toss with cumin, chili powder, salt, and the juice of one lime. Let marinate for 10 minutes.
  2. Slice bell peppers and onion into thin strips.
  3. Heat olive oil in a large skillet over high heat. Sear the chicken strips for 4-5 minutes until browned. Remove and set aside.
  4. In the same skillet, cook the sliced peppers and onion for 4-5 minutes until slightly charred but still crisp. Return the chicken to the pan, toss together, and squeeze the remaining lime over everything.
  5. Warm the flour tortillas in a dry pan or microwave. Serve the chicken and pepper mixture with warm tortillas and sour cream on the side.

Cook’s notes

Let the skillet get very hot before the chicken goes in, so the strips brown quickly without drying out. Steak or shrimp can replace the chicken. Guacamole, pico de gallo or shredded cheese are easy extras at the table.
