Ingredients

For 2 servings

Instructions

  1. Season and brown the chicken legs in butter over medium-high heat for 4 minutes per side. Remove and set aside. In the same pot, cook the bacon lardons until crispy.
  2. Add peeled pearl onions, sliced carrot, and quartered button mushrooms to the pot with the bacon. Cook for 5 minutes until lightly browned. Add minced garlic and cook 1 minute more.
  3. Pour in the red wine and chicken stock, scraping up all browned bits. Add the fresh thyme and nestle the chicken legs back in. Bring to a simmer, cover, and cook over low heat for 60 minutes.
  4. Uncover and simmer for 15 more minutes until the sauce is rich and slightly thickened. The chicken should be fall-off-the-bone tender. Serve in shallow bowls with the braising vegetables and sauce.
